1. Collect the peels from oranges. cut them into strips and remove the white part of the peels to your best ability.
2. Put the peels into a pot and cover the peels with water.
3. Bring to boil over medium heat and turn to low heat to simmer the peels for approx. 15 min
4. Drain the peels and set aside.
5. In the saucepan, pour in 2.5 cups of water and add in 1 cup sugar. Bring to boil and stir to dissolve sugar.
6. Add the peels and make sure everything is well covered by the sugar water.
7. Let it boil for about 1 min, reduce heat and let it simmer until peel is soft and translucent, takes approx. 30 - 45min. Pls keep an eye on the saucepan, don't let the liquid dry out completely.
8. Once done, take out the peels and let it cool down on baking sheet or metal rack.

When the peels are cooled, I stored them in air tight container in the fridge. I normally prepare the peels 1 or 2 days in advance before I need to use them.
The reminding sugar syrup is favored with a beautiful orange taste. Do save it for other uses such as sweetening into your tea or other baking purposes.
